Indeed.
Yeast is a natural, living organism; and fermentation is a natural, live process - you can't rush these things! Commercial brewers work under commercial pressures; so, for them, things like "fast" and "good keeping" and "travels well" are important - often at the cost of taste! The whole point of brewing your own is to escape these commercial pressures and their inherent copromises, and concentrate on getting something that tastes really nice! |
