If it is greyed out, you do not have the correct programmer connected.
A genuine ATavrisp programmer will be detected in avrstudio. The 89S51 and 89S52 can be programmed in avrstudio (I do it all the time). Or you can just run the stk500.exe using a batch file in windows. OR If you don't have an avrisp programmer, you can get an avrasp for use with avrdude. It works for 89S51 and 89S52.
