Yes I would also like to recommend the SBC kit sold on this site that Chris is talking about. Simple and good to go.
However if you need a good economical kit that is pretty fast to set up and get going, then I would strongly recommend the F120 DK from Silabs. I myself have it and its a versatile one. Possibly the first exposure to Silabs kit would mean that you learn how to handle the cross bar stuff. and with the F120 also the paged special function register use. But that again is just a matter of spending time and creating various code snippets with different HW setups for which you get a good configurator also free. Then of course the best for the Silabs kit is its debug capabilities - the ability to single step and read the registers on the CPU is something that you are going to need very soon if you are thinking serious coding. And when looking for kits don't look for one that come with readymade interfaces. While it may look easy to begin, it could be rathr limiting and the learning is much better if you can device your own interfaces based on need. And for this the Silabs Target Boards are great - they have all the ports neatly lined up for interfacing. In fact I just bought a F020 development kit and this gave me the mains adaptor, debug adapetr etc. Subsequently for any project I just buy the cheaper, relevant Target Boards and just add the keypad / LCD / I-O interfaces. good luck.
