Isn't it time for you to study basic C?

* means it's a pointer.
unsigned int is not (!) the size of the pointer. It is the type of the data the pointer points at.

So having a pointer to unsigned int, and using this pointer to pick up an unsigned int, and store into a char, does show that you have problems understanding basic data types.

Most EEPROM implementations works with 8-bit data, so they pick up or writes one byte at a time. You then potentially write helper functions that reads and writes larger-sized variables.
