If you don't intend to deal with BGA packages and various 32-bit controllers (with their quirky and half-baked development environments), and if you don't want to seek for a different LCD module with on-board controller, the easiest way would be to use some of the Epson's offerings - some of them come with integrated RAM and "human" LQFP package.

I don't know about their availability, though.
