... and how much RAM is enough? And, has that to be RAM, couldn't you make use of a self-programmable FLASH?
The biggest RAM among the '51 derivatives available "over the counter" is AFAIK in the uPSD3xxx, up to 32kB. They have a lots of FLASH, too. There are then some specialties, but the availability would be problematic, I am afraid. Try http://www.tezzaron.com for a really big one.
