Is there such a thing as adjustable input offset? IE: during the zero'ing process, I would like to "adjust" one signal to equal that of the other. Is this typically how such a condition is handled?

Yes. However, I am not aware of an ADC that offers the possibility of using one signal as the "zero" for the other directly.

You may have to record the difference "manually" and subtract the offset from the second signal. Of course, if the two sensors also have a different gain, things get more complex.
