Zigbee & Bluetooth address very different requirements & application areas:

Zigbee is very low power, (relatively) low data rates, supports quite long range and Mesh networking;

Bluetooth is very short range and designed for high data rates - like audio.

There are, of course, plenty of other RF link types (many proprietary) that could be used for "RS232 cable replacement"...
